This is a nice light dish served cold. Nicknamed somewhat unattractively "Sea Beetles" this is one of my favorite meals on a hot day.

Ingredients - Main
Shrimp 1 lb
Pasta 2 cups
Snow Peas
Asparagus
Ingredients - Source
Olive Oil 2 tea spoons
Hot Pepper 1
Shallot 1
Sliced Garlic 2 cloves
Lemon or Lime 1
Old Bay Seasoning a tad
  1. Boil the pasta (the exact type isn't important).
  2. When done rinse in cold water.
  3. At the same time but in a separate pot, boil the shrimp with a liberal amount of Old Bay seasoning.
  4. When the shrimp are cooked rinse, chill in ice water & peal.
  5. Chop the asparagus into bite sized pieces then lightly boil for only a couple of minutes. It should remain crisp.
  6. Slice the garlic & hot pepper then microwave on high for 30-45 seconds.
  7. Combine everything in a large bowl & add the juice from one lemon or lime.
  8. Mix well then place in the refrigerator. When chilled serve with chop sticks.
