OK so Duck l'Orange is pretty good but it doesn't compare to this concoction I came up with. Inspired from a line in the movie Four Weddings & a Funeral I had to give this a try.

Ingredients for 1 Serving
Duck 1
Banana 2
Sugar 6 Table Spoons
Lemon 1
Paprika
Salt
Pepper
Sherry 2 Table Spoons

 

 

 

 

 

 

  1. Rub the duck with liberal amounts of paprika, salt & pepper
  2. Set rotisserie to 400º & cook duck for 2 to 3 hours or until the popup timer thingy pops
  3. Approximately 30 minutes before the duck is due to be done cooking prepare the banana sauce
  4. In a frying pan over a medium-low heat combine the sugar, juice from a leamon & sherry. Bring mixture to a boil stirring frequently
  5. Split bananas down the middle & then chop into 2 inch chunks
  6. Add the banana to the boiling sauce & let cook until banana becomes soft
  7. Remove the banana chunks once cooked & continue to boil the sauce until it begins to brown. Sauce should be quite think & sticky but take care not to over cook
  8. Place the sauce & banana in a serving bowl
  9. Once duck is done cut into quarters. I find scissors are the best way to do this
  10. Serve with potatoes & your favorite vegetable
